Healthy Apricot Chicken



Serves 4

Cooking time - 45 minutes

10 Ingredients


Ingredients:

500 grams chicken thigh

1 brown onion

1 cup dried apricots

2 tea spoons minced garlic (or 2 garlic cloves)

1 tablespoon Moroccan seasoning

1 lemon

1/4 cup gluten free flour

1 cup water

1 cup chicken stock

1 cup rice


Method:

  1. Pre-heat oven to 180 degrees Celsius

  2. Cook chicken thigh in oil on each side for 5 minutes (lightly cook/brown)

  3. Mix the water, chicken stock, garlic, seasoning, lemon, and flour into a bowl

  4. In a cast iron pot or oven dish place rice into it

  5. Pour bowl of ingredients on top of rice and mix with a spoon until evenly mixed

  6. Place onion on top of rice

  7. Once chicken is browned place it skin side up in the dish

  8. Place the apricots on top ensuring that most of apricots and half of chicken is submerged into water

  9. Let simmer on stove until hot, then place lid on oven dish

  10. Cook in oven for 30-35 minutes

  11. Take lid off and cook for a further 10 minutes to brown chicken and top of dish
