Chocolate Coconut Slice

10 Ingredients


Dry Ingredients:

1 1/3 cups of plain gluten free flour

1 cup brown sugar

6 tbsp cocoa powder

1/2 tsp baking powder

2/3 cup desiccated coconut

1 cup icing sugar

Wet Ingredients:

180 grams salted butter

1 tsp vanilla extract

3 eggs


Method:

  1. Pre-heat oven to 180 degrees Celsius

  2. Line a square pan with baking paper

  3. Mix the base ingredients into a bowl - stir 150 grams of melted butter and 1 cup brown sugar together until combined

  4. Add flour, 3 tablespoons of cocoa powder, desiccated coconut, vanilla extract, 3 beaten eggs to bowl

  5. Stir until combined then add to the pan and bake for 30-35 minutes until tooth pick comes out nearly clean

  6. Make icing - add 1 cup icing sugar with 3 tablespoons of cocoa, 20 grams melted butter, and a dash of hot water if required into a bowl

  7. Mix with hand beaters

  8. Once slice base is completely cooled, add icing on top

  9. Sprinkle extra coconut on top to serve


About/Tips:

This slice can be frozen to keep for a future date.
